beans and pea couscous salad

Its time to present this lazy recipe of mine. I learned this recipe when I was working with Morrocan Jewish who loves couscous.

You will need :

 1 cup (200g) couscous
2 tablespoons lemon juice
1 cup (250ml) boiling water
150g baby green beans, trimmed, halved
150g sugar snap peas, trimmed
1 cup (120g) frozen baby green peas
1½ tablespoons wholegrain mustard
¼ cup (60ml) olive oil
¼ cup finely chopped fresh chives
Here's how:

Combine couscous, juice and the water in medium heatproof bowl; stand about 5 minutes or until liquid is absorbed, fluffing with fork occasionally, cool.

Boil, steam or microwave beans and peas, separately, until just tender; drain. Rinse under cold water;then drain.

Combine mustard and oil in large bowl,  add couscous, beans, peas and chives, toss gently. 

Voila you have an easy recipe.. good for lazy people like me lol!
