Stir Fry Vegetables with Noodles

Stir frying is an umbrella term used to describe two techniques for cooking food in a wok while stirring it: chǎo and bào . The term stir-fry was introduced into the English language by Buwei Yang Chao, in her book How to Cook and Eat in Chinese, to describe the chǎo technique. The two techniques differ in their speed of execution, the amount of heat used, and the amount of tossing done to cook the food in the wok. Cantonese restaurant patrons judge a chef's ability to perform stir frying by the "wok hei" produced in the food. This in turn is believed to display their ability to bring out the qi of the wok.

Two days ago while sorting out my things, my mouth craved something to eat. It wasn't fish, chicken, neither beef. Checking at the freeze which was full of vegetables and fruits. Suddenly, hits my mind to make a stir fry. And when I opened the cupboard to get some spices I saw some canton noodles. So, I added noodles to my stir fry that came out so perfect and delicious. It is my comfort food indeed.

This was before I add the noodles

Baked Red Mullet

I picked this fish two weeks ago because I want to make something different for Sara's dinner. I didn't know the name of the fish in English. I know that my father used to bring home this kind of fish when I was a little kid. And I love they way he cooked it. But it was fresh unlike this, it's frozen fillet.

Out from my curiosity with this fillet fish.  I entered in google seach engine the name tag from the plastic bag  " PARUPENEUS HEPTACANTUS". I found out that  "parupeneus heptacantus" is the scientific name of Red Mullet Fillet.

Accoring to Wikepedia: The red mullets or surmullets are two species of goatfish, Mullus barbatus and Mullus surmuletus, found in the Mediterranean Sea, east North Atlantic Ocean, and the Black Sea. Both "red mullet" and "surmullet" can also refer to the Mullidae in general.

This my own version for baked red mullet.

8 red mullets fillet
juice of one lemon
a dash of dried basil leaves
3 tbsp olive oil
dash of pepper and salt
fresh parsley
minced onion
ounce of white wine

1. Rinse and dry the mullet fillet
2. Spread fillet in a baking pan, skin side down.
3. Add lemon juice and white wine, sprinkle a dash of basil leaves, pepper and salt.
4.Sprinkle with olive oil and add the minced onion and parsley.
5. Baked at 350 degrees for 15-20 minutes.

You can served it with steamed vegetables and couscous.

Crispy Chicken With lentil Ragout

Have you try to make these recipe? Then, if not , try it now. Was my first attempt to make these and turned out perfect. As Sara expression " oist collect the teller" an Yisddish word means- "licked the plate", delicious and succulent as she said!

 Ingredients :
2 celery sticks, trimmed and finely sliced
8  boneless chicken fillets, skin left on
225g can green lentils
2 leeks, trimmed and finely diced
2 carrots, finely diced

Instructions:

1. Put half the leeks, carrots , and celery in a pan, cover with cold water, adding a chicken stock cube if desired for extra flavour, bring to boil. Reduce the heat and simmer until the veg is tender, then strain.

2. Heat a frying pan over a medium heat. Add 1 tbsp of olive oil then place the chicken in the pan skin-side down. reduce heat to low and cook for 20-25 minutes until skin is crispy.

3. When the chicken is slightly brown, turn over and cook for another 5 minutes until tender. Remove from heat and leave to rest.

4. Heat 2 tbsp. olive oil in a pan and cook remaining leeks, carrots, and celery for about 10 minutes. Stir in the lentils and stock. Season and simmer for a few minutes until most of the stock has been absorbed and the veg is tender.

5. Carve each chicken fillet into 2 to 3 inches slices. Spoon the little mix on the plates and place chicken on top.

Recommendation : Instead of chicken, use thinly sliced, grilled low fat haloumi, which is slightly less salty than full fat.

Successful Dinner

Last night Sara and I hosted a Friday night's dinner. Most often Sara's daughter invited us but because she went for a wedding yesterday afternoon and didn't have time to make for Friday night's dinner. Sara decided to invite them. (Yabang nga eh, parang siya naman mag luluto).LOL! And of course, she cannot almost see, I'm the one who does the cooking.

I'm always scared when Sara invite her daughter, not because she is horrible person. She is not horrible, she is very generous and very kind to me. I'm just scared because, I have to make it nice and perfect. Not to impressed them but they are picky and they only eat fish and vegetable. No chicken, no meat.

Then.........the night start with

My baked Salmon, was a quick shoot. They might say, I'm meshugana (crazy) if they saw me taking pictures. That's why I don't have picture of my creamy tomato soup and for our appetizers Sara asked me to serve Watermelon.
Our main course
Salmon with baked potatoes, grilled sweet potatoes, peas and beans. I made curried sauce also and poured into the Salmon. Curry sauce is David and Anne favorite. So, that's an added bite for the dinner. I don't have picture when it served because they were helping me in the kitchen.

Lemon maringue pie that we bought yesterday in town and Chocolate with almond and pecan ice cream

Table Setting

With a Chala bread in the center covered by Shabath Cloth

I thought I cannot make it , but yes, it was a successful dinner indeed! Happy Weekend to All
