Mello Yellow Fruit Salad

Sara son the Orthopedic Surgeon is here. He is visiting his mother for a few days but he is staying in a hotel. On Saturday, he spent time with Sara, sat by the pool and have lunch together. I served them a simple green salad with sandwiches and a fresh fruit salad which I made on Friday. He found the fruits salad that I made was dry, so he asked me to put some oranges juice with it. Secrets of dry fruit salad  by adding some orange juices on it.

Successful Dinner

Last night Sara and I hosted a Friday night's dinner. Most often Sara's daughter invited us but because she went for a wedding yesterday afternoon and didn't have time to make for Friday night's dinner. Sara decided to invite them. (Yabang nga eh, parang siya naman mag luluto).LOL! And of course, she cannot almost see, I'm the one who does the cooking.

I'm always scared when Sara invite her daughter, not because she is horrible person. She is not horrible, she is very generous and very kind to me. I'm just scared because, I have to make it nice and perfect. Not to impressed them but they are picky and they only eat fish and vegetable. No chicken, no meat.

Then.........the night start with

My baked Salmon, was a quick shoot. They might say, I'm meshugana (crazy) if they saw me taking pictures. That's why I don't have picture of my creamy tomato soup and for our appetizers Sara asked me to serve Watermelon.
Our main course
Salmon with baked potatoes, grilled sweet potatoes, peas and beans. I made curried sauce also and poured into the Salmon. Curry sauce is David and Anne favorite. So, that's an added bite for the dinner. I don't have picture when it served because they were helping me in the kitchen.

Lemon maringue pie that we bought yesterday in town and Chocolate with almond and pecan ice cream

I thought I cannot make it , but yes, it was a successful dinner indeed! Happy Weekend to All

Apple Crumble

Hey, guys! Got inspired to make this recipe yesterday. I have seen Sarah daughter making this recipe. So, I thought I would love to try. The thing was, I never measured the ingredients. Let see how it came out. And what Sara have to say?

1. Slice the apple into thin small pieces.

2. Put it in a pan, with1 tablespoon of water and a little sugar to sweetened. You can put lemon juice instead of water. Bring to cook for 5 minutes.
 3. Place the flour and oats and sugar in a bowl and mix well. Cut the margarine or butter into small cubes and add this to the oats, flour and sugar Mix with your fingertips until it resembles and even crumbs.
 4. Place the cooked apple ( by the way you can use cooking apple, I used ordinary apple) in an oven dish.
 5. Cover the apple with the crumble mixture. Bake for approximately 20 minutes until the crumble is golden brown.

Voila these is the result and Sara said something lacking (hmm..the lemon juice and add more apple too) but excellent. That was my first attempt..and it taste crunchy and tasty.

Till next time folks!

Nutty Granola Ice cream

Growing up away from my parents,  I learned how to cook and started loving it. Since then, I was collecting recipes and try making an experiment with my cooking habits.

Sounds I'm good but truly I'm just beginning  to explore my hidden interest in the kitchen.

I remember two years ago, I made this nutty-granola ice cream. It wasn't perfect as I expected and I didn't have a save photographs here since my computer was reprogram.

I took this recipe from a magazine and kept it in my scrapbook.

Here the ingredients and the method of making it :

INGREDIENTS
Ice Cream

8 eggs
304 cup sugar
2 cups non-dairy cream
1 teaspoon vanilla
1 packet vanilla pudding

Granola

1 cup sugar
100 grams margarine
1 cup chopped peanuts
1 cup flour

Method

1. Beat the egg whites with sugar for approximately 5 minutes till thick and frothy.
2. Add egg yolk and vanilla and continue beating.
3. Pour in  non-dairy cream and vanilla pudding and beat well until the mixture has increased in volume.
4. Mix sugar, softened margarine, nuts and flour with your fingers and place on a baking tray.
5. Bake at 180 C for approximately 20-25 minutes til golden brown.
6. Break into pieces and stir through ice-cream sprinkling some on top.
7. Pour into container and freeze.

This is good for the summer. I plan to make it tomorrow and I promise  I will take some photos and post it here.
